Ingredients:

2 cups dry lentils

6 cups vegetable broth

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

2 carrots, peeled and diced

2 stalks celery, diced

1 zucchini, diced

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

Instructions:

Rinse the lentils in a fine-mesh strainer and set aside.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and minced garlic to the pot and sauté for 3-4 minutes, or until the onion is translucent.

Add the diced carrots, celery, and zucchini to the pot and sauté for another 3-4 minutes.

Add the lentils to the pot and stir to combine.

Add the vegetable broth, dried thyme, paprika, bay leaf, salt, and pepper to the pot and stir everything together.

Bring the soup to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the lentils are tender.
