Improved Insulin Sensitivity: Participants on the vegan diet also saw enhancements in insulin sensitivity, a key factor in diabetes prevention and management.
Participants following the vegan diet also saw an increase in their Alternative Healthy Eating Index-2010 (AHEI) score, which measures diet quality based on foods linked to lower chronic disease risk.
This improvement contrasts with no significant change in the control group. Higher AHEI scores indicate a diet more conducive to preventing chronic diseases.
